I had the idea of doing a crusty tofu for a while and I have to say, this recipe is packed with flavours and texture. We had it with salad and it was perfect. Bring tofu to centre of the table and your friends and family will be impressed.
- 396 firm tofu
- 15g basil
- 25g spinach leaves
- 3 tbsp breadcrumbs
- 1 tbsp nutritional yeast
- 1/2 tsp salt
- 2 tbsp olive oil
- Drain the water out of the tofu and cut it in 6 thick slices.
- Beat the rest of the ingredients on a food processor.
- Spread the mixture on top of the slices of tofu.
- Fry it for 3 minutes.
- Transfer it to a baking tray and grill it for 5 minutes or until the crust is cooked and crunchy.
