This is a quick recipe for one of those days when you don’t feel like cooking and want something simple yet tasty and nourishing. There is no need to cook or pan fry the noodles, as they will give a bit of texture to the dish. The almond oil makes the whole difference and will leave your kitchen smelling like heaven. Give it a go, I guarantee you’ll love it!
Ingredients
- 300g rice noodles
- 6 red seedless peppers diced
- 1 small carrot diced
- 5 shallots sliced
- 50g smoked tofu diced
- 5g chives chopped
- 50g sun blushed tomatoes
- 100gr baby leaf spinach
- 1/2 tbsp smoked paprika
- 1 tsp chilli powder
- Salt
- 3 tbsp almond oil
Method
- Transfer the noodles to a big bowl, pour hot water to it and set aside.
- Using a wok or a big frying pan, fry the pepper and shallots on the almond oil for 5 minutes.
- Add the rest of the ingredients apart from the spinach and cook for about 10 minutes stirring from time to time.
- Turn off the fire, add the spinach, the noodles and serve.
