This is a traditional accompaniment in Brazil and it is delicious. It’s super easy and quick to prepare and is perfect with rice and salad. Give it a go, you’ll love it!
- 330g sweetcorn
- 1/2 onion chopped
- 500ml vegan single cream
- 1 cube vegetable stock
- 20g vegan cheddar cheese
- Fry the onion until tender.
- Add the sweetcorn and vegetable cube and cook it for 10minutes.
- Turn the fire off, pour in the single cream and the “cheese” and stir for a couple of minutes.
